Molasses is the viscous product derived from the must of grapes after boiling, without prior fermentation, which is a flavoring with rare taste and slightly roasted taste.
It is used in sweets during baking and also as a sweet topping for some foods, sweets or salads. It is currently used throughout Greece and can be produced for use at home, or for sale under various trade names. There are light and dark syrups and these depend on the type of grape used, as well as on the way we boil it (in pots in large quantities so it becomes dark or little by little in the pan, so it becomes light).
Molasses should not be confused with wort. Must is the juice (must) produced when we squeeze the grapes, without boiling. Boiled wort is also called cut wort. Depending on the boiling time, molasses is produced in various densities.
