One of the rarest and most valuable salts, Persian Blue is produced from a single ridge that cuts through an ancient salt lake bed in Iran. Its color is due to an optical illusion, due to the movement of tectonic plates that causes the salt to take on the color of sylvine, another mineral.
On the palate, it has a strong initial saltiness and yields a fine lingering aftertaste. Its gorgeous appearance makes it great for garnishing, but be aware that the color will fade the finer it is grated. A great way to use Persian Blue salt is to use it to coat the glass rim when making a Margarita. Persian Blue salt is the perfect solution whenever a truly luxurious salt is needed!
