Fenugreek has a soft and slightly sweet taste reminiscent of nuts, and it is considered to taste like a combination of maple syrup and celery, with a touch of bitterness. Its smell is very strong and characteristic, spicy and heavy. It goes perfectly with chicken and meat dishes and is a key ingredient in many curry mixes, as well as in pastourma.

It was used in ancient times for its healing abilities and its nutritional value. It is rich in vitamins, minerals, trace elements, dietary fibers, it has many phytochemical substances, one of which helps in the production of insulin and the regulation of sugar. It helps with constipation, due to its vegetable fibers, and in the regulation of high cholesterol.
