Chun Mee
Chun Mee tea is a popular green tea that has a light fruity flavor reminiscent of plum and produces a golden brew. The word Chun Mee translates into Chinese as "Precious Eyebrow", and is pronounced "Zhen Mei". Chun Mee is classified as a "famous" Chinese green tea, which means that it is extremely popular and respected in China. "Famous Teas" change all the time, depending on trends within China, and Chun Mee is a regular contender for this coveted title. It is called "Eyebrow Tea", and the words Chun Mee actually means "Precious Brow". The way the leaves are formed for different green teas is complex and involves several steps. Το Chun Mee παίρνει 25 διαφορετικά βήματα για την παραγωγή, συμπεριλαμβανομένων 10 διαφορετικές κινήσεις των χεριών για να διαμορφώσει, πατώντας και γυρνώντας τα φύλλα και μπουμπούκια κατά τη διάρκεια της παραγωγής. Περιγράφονται στα Μανδαρινικά ως:
抖、搭、搦、捺、甩、抓、推、扣、压、磨
dǒu, dā, nuò, nà, shuűi, zhuā, tuī, kòu, yā, mó
This roughly translates to:
Shaking, piling, holding, pressing down, throwing, grabbing, pressing, covering, squeezing and rubbing. These movements subtly change the taste, color and aroma of the final tea, as well as its shape. Chun Mee leaves are slightly curved like a lady's eyebrows. They are initially small, fluffy immature tea buds, with the white hairs still remaining on the bud, and the hand movements, temperature and time spent making this tea combine to give this beautiful, uniform twist to the final tea . Originally, Chun Mee was called "Famous Plum" because of its delightfully mild taste reminiscent of a plum and also because it was first produced in a place called Shangmeizhou, whose name translates as "Upper Plum Village".
