Chinese five spice mix consists of five ingredients, with the fifth always up for debate. Star anise, cloves, fennel seeds and cinnamon are mandatory. Then it gets tricky as either the fifth spice consists of black peppercorns or Sichuan peppercorns.
It really depends on who you ask in China. Even in the southern parts of China cinnamon is exchanged for dried tangerine peel. This 5-spice seasoning is primarily used as a rub or marinade ingredient for pork or duck as it brings out their rich, naturally savory flavors. This Chinese spice powder also pairs well with garlic, scallions, ginger and soy sauce.
