Genmaicha (玄米茶, brown rice tea) is essentially a mixture of green tea and roasted rice. This blend balances the astringency of green tea with the nutty flavor of roasted rice. The Japanese consider genmaicha to be a type of Japanese green tea rather than an ordinary blend, perhaps because they have been enjoying it for quite some time.

Genmai is also the word for “brown rice” in Japanese, but most fried rice is actually made with white rice. Since both genmaicha fried rice and brown rice use the same word in Japanese, it's a bit confusing.

So why is white rice used instead of brown rice? Apparently, brown rice is not as flavorful when cooked and turns much darker than cooked white rice.

Bancha

Bancha is the traditional everyday green tea. Made from mature tea leaves and sourced from the fall harvest, bancha is lightly roasted to develop an earthy, sweet, slightly nutty flavor profile and golden infusion. Bancha is also great for cold brew tea as it has mild caffeine levels due to its roasting process.
