Thyme honey is produced by the Souka family in Lefkada. It is considered high quality honey. It belongs to the flower honeys, but in fact it is a separate category due to its strong aromatic and taste characteristics. Its production amounts to approximately 10% of the total honey production of Greece.
Taste:
Thyme honey has a pleasant taste, but sometimes, due to its high concentration of fructose, it leaves a burning sensation in the mouth.
Nutritional value:
Thyme honey is considered to have tonic and antiseptic properties. It is rich in trace elements (iron, potassium, phosphorus, magnesium, calcium) and in nutrients, while it has a high content of fructose, vitamins A, β-carotene, complex of B vitamins and minerals.
Perfume:
Intense speech of the ethereal aromas of thyme.
Colour:
Usually light amber. (The thyme honey of Attica and the Cyclades is lighter than the thyme honey of Crete, which is dark orange.)
Crystallization
This particular type of honey turns sweet over a period of 6-18 months.
