Tomatoes are dehydrated to form this unique powder. It’s a nice way to enhance sauces and vinaigrette when you want the taste of tomato, but none of the acidity.
We like to mix a tablespoon in a meat roll mixture before baking. Add a tablespoon or two to your favorite pasta recipe.
The resulting orange pasta will burst with their tomato flavor once cooked. Serve with anchovies, basil and freshly grated Pecorino Romano.
