Paprika is a spice produced by rubbing dried chili peppers. He came to Europe from Mexico and spread all over the world. Paprika is used for its wonderful sweet taste and for the strong red color it gives.
It varies from sweet to dry and is very rich in vitamin C. Not all paprika varieties have the same color. Paprika is evaluated by the amount of pigment it contains. It has different grades referred to as ASTA (American Spice Trade Association) and quality is investigated with standardized testing procedures.
The more pigment paprika has, the higher the ASTA number. So at the lower end we have the 85-ASTA paprika, which will have a light orange or brown color and at the higher end is our 200-ASTA paprika, which has a much brighter red color.
