Crunchy but with a buttery texture, pleasantly sweet and delicious, pine nuts are the small edible seeds (kernels) of the female pine cone.

The cores of pine are, indeed, a wonderful source of plant nutrients, essential minerals, vitamins and “heart-friendly” monounsaturated fatty acids that help health immensely by reducing the levels of bad cholesterol in the blood.

Pine nuts are one of the calorie-rich fruits. 100 grams of dry kernels provide 673 calories. In addition, they include numerous phytochemicals, vitamins, antioxidants and health-promoting minerals.

Their high caloric content comes mainly from fats. Indeed, nuts are especially rich in monounsaturated fatty acids such as oleic acid (18:1 undefeated fat) which helps reduce LDL or “bad cholesterol” and increases HDL or “good cholesterol” in the blood.

Pine nuts contain the necessary fatty acid (omega-6 fats), pinolenic acid. Recent research has shown its possible use in weight loss by limiting appetite. Pinolenic acid causes the release of enzymes that suppress the hunger of cholecystokinin and Glucagon-1 peptide (GLP-1) in the intestine. Also, pinolenic acid has been believed to have LDL-reducing properties by enhancing his hepatic LDL intake.

Like almonds, pine nuts are also an excellent source of vitamin-E, in a composition of about 9.33 mg per 100 g (about 62% of RDA). Vitamin E is a powerful fat-soluble antioxidant, required to maintain the integrity of the cell membrane of the mucosa and skin, protecting it from harmful oxygen free radicals. In addition, pine nuts are one of the fruits of gluten-free trees and, therefore, it is a popular ingredient in the preparation of gluten-free food preparations. Such preparations can be a healthy alternative in people with an allergy to wheat and celiac disease food.

Pine nuts are an excellent source of the group of B vitamins such as thiamine, riboflavin, niacin, pantothenic acid, vitamin B-6 (pyridoxine) and folic acid. These vitamins act as co-agents for enzymes in the metabolism of the cellular substrate within the human body. In addition, pine nuts contain healthy amounts of essential minerals such as manganese, potassium, calcium, iron, magnesium, zinc and selenium. At 8,802 mg per 100 g (about 383% of the daily recommended intake), pine nuts are one of the richest sources of manganese. Manganese is a very important co-factor for the antioxidant enzyme, peroxide demutase.

Therefore, eating pine nuts helps the human body to develop resistance against infectious agents and eliminate harmful roots without oxygen.
