Chun Mee tea is a popular green tea that has a light fruity flavor reminiscent of plum and produces a golden beverage. The word Chun Mee is translated into Chinese as “Precious Eyebrow”, and is pronounced “Zhen Mei”. Chun Mee is described as a “famous” Chinese green tea, which means it is extremely popular and respected in China. “Famous Teas” changes all the time, depending on trends within China, and Chun Mee is a regular contender for this coveted title. It’s called ‘Brow Tea’, and the words Chun Mee really mean ‘Precious eyebrow’. The way in which leaves are shaped for different green teas is complex and involves several stages. Chun Mee takes 25 different steps for production, including 10 different hand movements to shape, pressing and turning leaves and buds during production. They are described in Mandarin as:

This roughly translates as: Shaking, accumulation, holding, downward pressure, flying, grabbing, pressing, covering, compressing and rubbing. These movements subtly change the taste, color of the drink and aroma of the finished tea, as well as its shape. Chun Mee leaves are slightly curved like a lady’s eyebrows. They are initially small, fluffy immature tea buds, with white hairs still remaining in the bud, and hand movements, temperature and time spent making this tea combine to give this beautiful, uniform twist to the final tea. Initially, Chun Mee was called “Famous Plum” because of its delightfully mild plum flavor and also because it was first produced in a place called Shangmeizhou, whose name translates as “Upper Plum Village”.
