The term “tandoori” comes from India and refers to the tandoor or tandoori oven. The oven is made of brick and clay and when burning, it can reach temperatures of 260C.
The intense heat and huge smoke produced by the fire and the construction of the oven ensure that the food is cooked quickly and the juices are sealed. Tandoori spice is most commonly used in tandoori chicken. The recipe requires the chicken to be marinated in yogurt and then poured with tandoori spice which is a mixture of spices mainly known for its bright red color often caused by cayenne, chili and tomato powder. The result is a red roast chicken with plenty of flavor and crispy skin.
