Mao Feng tea is one of China’s most famous tea varieties. It is cultivated in the mountains around Hangzhou district, an area known for its excellent teas, high rainfall and frequent fogs. It was first produced in the 1800s, still collected only for a few weeks in early spring, when buds are in their earliest phase, and are processed by hand. It is bright and fresh tea, with interesting complexity and peach notes.
Sencha is a safe option especially for those who are starting to drink tea for the first time. It has a strong taste and a lemony aroma. To have this fine green tea, the leaves are collected and immediately begin their gentle heating so that there is no excessive oxidation and the leaf to keep its color and juices.
