It has a delicate sweet taste and smell reminiscent of honey and straw and is used in food and sweets. It is used in rice and risotto, in chicken, in legumes, in vegetables, in yogurt dips and even in sweet creams. It is also used as a coloring agent for rice or sweets, as it gives a golden yellow color. It is recommended to soak the amount of yolk we want to use in water an hour before use and to use it sparingly as its flavor can alter the taste of the rest of the food.
